Ashleigh + Collin tried to keep their wedding as eco-friendly as possible with DIY, recycled, and fair trade elements throughout their big day.

From the beginning they did it all – created their own save-the-dates, invites, coordinated with all the vendors (most of which were friends from their local farmers market), and even designed their own wedding cake (all while running their own business). They really wanted to make everything truly meaningful and personal.

“Most of all we wanted our guests to have FUN, celebrate with us, and experience our love for San Diego! We wanted the overall vibe of the day to be relaxed and festive all at the same time! We tried our best to capture those ideas, while incorporating our ideals, and we couldn’t be happier with how everything turned out. It was truly the BEST day of our lives, and we really felt everyone was blessed by it (especially since the girls didn’t have to wear heels to our wedding!)” – Ashleigh

The bridesmaids all wore different shades of yellow, turquoise, and pink to give off the vibe of their fiesta-inspired wedding. Ashleigh gifted each of her bridesmaids Sseko Sandals handmade in Uganda – a project that helps send young women to college – to wear at their beach ceremony. Ashleigh also sported the socially-conscious sandals with silk straps that matched her wedding dress, and the guys wore white Sanuks with ties that matched the girls bridesmaid dresses.

For a growing number of consumers, the desire to purchase jewelry, home decor, and gifts, is balanced by the need to act responsibly toward society and the environment–which means limiting unnecessary consumption and choosing items that are produced in a socially conscious way. For them, fair trade products are the ideal solution.

Dan Welch, co-editor of Ethical Consumer Magazine, recently noted that eco products continue to rise in popularity, bucking the consumer trend in light of the recent recession. Fair Trade gifts are among the list of eco products that topped sales charts within the last year.

Now more than ever, consumers of all backgrounds are seeking out the value behind the products they purchase. Today, how products are sourced, manufactured, packaged, and shipped all affect consumer spending. This new consciousness is not confined to younger generations; over half of Baby Boomers consider themselves socially conscious shoppers.

The trend in ethical shopping is expected to increase as more and more socially conscious businesses join the market, and consumers continue to look for products that are at once, “pesticide free” “fair trade” and “sustainably harvested.”

That means homemade sugar cookies, kitties in my bed, Christmas Eve dinner, baking with my mom, a dishwasher, my old pajamas from ninth grade, northern accents, walks with my mom, game nights with my sister, tea every morning, pumpkin bread, our christmas tree, and much needed quality time with my family.

Christmas is my favorite time of year, for all these reasons and more. But one of my favorite holiday activities has always been baking goodies with my mom and my sister. We always make our traditional favorites, but every year we throw in a few suprises. Here’s a recipe I’ve been drooling over for the past month – it sure looks delicious!

Peppermint Crunch Blondies
Servings: 8-12

Ingredients:
1 Cup flour
1 Cup brown sugar
3/4 Cup walnuts, toasted
1 1/2 tsp baking powder
1/2 tsp kosher salt
1/2 Cup coconut
1/2 Cup chocolate chunks
3/4 Cup crushed candy cane
1/2 Cup earth balance or butter, melted
3 eggs
2 tsp pure peppermint extract
2 Tbsp almond milk

Directions:
Preheat oven to 350F. Line a square pan (or round) with parchment paper. In a small bowl, mix eggs and set aside. In a medium sized bowl, mix the flour, baking powder, and salt. In a large bowl beat together the brown sugar and melted butter for about 3 mins. Add in the eggs, peppermint extract, and almond milk. Beat for 60 seconds.

Stir in the flour mixture until fully incorporated. Now stir in the walnuts, chocolate, coconut, and 1/4 cup of candycane chunks. Pour batter into prepared pan and spread with spatula. Sprinkle on 1/2 cup of crushed candy cane and bake for 30-35 minutes at 350F. Allow to cool for 30 mins. before removing from pan.
