Tasty Tuesday: Fair Trade Chocolate Muffins!

Yesterday was Memorial Day, which is the unofficial kickoff of summer and in my mind summer is about cookouts and time spent at the park! And of course, what goes better with cookouts and picnic but dessert!!! So this summer when visiting friends and family why not share some delicious fair trade chocolate muffins!

I made this recipe for a party once and they were a big hit, but this time they are fair trade chocolate muffins, not just plain ole chocolate muffins. All the chocolate the recipe calls for is available in fair trade and the chocolate I used was fair trade. I also used fair trade brown sugar and fair trade cocoa powder.

Chocolate Muffins Before

Chocolate Heaven Muffins (from Weekend Baking: Easy Recipes for Relaxed Family Baking)

5 tablespoons butter

2.5 oz bittersweet chocolate (about 50% cocoa solids)

2.5 oz milk chocolate

2 oz white chocolate

1/2 cup sour cream

3 tablespoons milk

1/4 cup light brown sugar

2 large eggs

1 1/3 cups all-purpose flour

2 tablespoons cocoa powder

1 tablespoon baking powder

a pinch of salt

1 tablespoon sugar

Makes 6

Preheat the oven to 400 degrees Fahrenheit. Melt the butter in a small pan and let cool slightly. Chop up the three types of chocolate into small chunks. In a large mixing bowl and using a balloon whisk, whisk together the sour cream, milk and sugar, eggs and melted butter. Sift in the flour, cocoa, and baking powder. Sprinkle in the salt and add all the chopped chocolate. Using a large metal spoon, fold everything together until combined, but don’t over mix. Spoon the batter into the muffin liners. Sprinkle each muffin with a little sugar. Bake the muffins in the preheated oven for 20 minutes – by which time they will be risen, but still very slightly unset in the middle. They will cook at they cool.

 

Fair Trade Hot Fudge

It’s ice cream season!!! And what is better with ice cream than a little (or a lot of) fair trade hot fudge. The idea of making hot fudge (fair trade hot fudge or otherwise) seemed daunting to me until I found a super easy recipe in Gwyneth Paltrow’s cookbook “My Father’s Daughter” .  I made some changes so as to use fair trade chocolate and it was still very tasty!

My Favorite Homemade Hot Fudge (aka Fair Trade Hot Fudge)

3 ounces semisweet dark chocolate (62 percent), finely chopped (I used fair trade chocolate chips at 42 percent)

1/4 cup heavy whipping cream

2 tablespoons brown rice syrup (or light corn syrup) (I used light corn syrup)

Combine all of the ingredients in a double boiler (or in a metal or glass bowl set above a pot of simmering water) and stir until completely melted about 3 minutes. Serve warm.

 

Gluten Free Chocolate Chip Cookies

Over the next few Tasty Tuesdays I will be baking chocolate chip cookies with different fair trade chocolate chips and I will be using different recipes from some of my favorite foodie bloggers!

This week’s recipe “The Best Gluten-Free Chocolate Chip Cookies Ever” comes from Sarah, at Peas and Thank You.

The Best Gluten-Free Chocolate Chip Cookies Ever
Ingredients (24 large cookies)

  • 1 c. organic butter or non-dairy margarine, melted
  • 1 c. brown rice flour
  • 1 c. gluten-free oat flour (finely ground in a food processor or blender)
  • 1/4 c. + 1 T. cornstarch
  • 1 t. xanthan gum (I picked this up from my food coop)
  • 1 t. salt
  • 1 t. baking soda
  • 1/4 c. organic sugar
  • 3/4 c. brown sugar
  • 1 organic egg + 1 organic egg yolk or 2 flax “eggs” (2 T. ground flax + 6 T. water, whisked and allowed to thicken)
  • 2 T. organic or non-dairy milk
  • 1 1/2 t. vanilla
  • 1 1/2 c. semi-sweet chocolate chips

Instructions

  • In a medium bowl, combine the rice flour, oat flour, cornstarch, xantham gum, salt and baking soda. Set aside.
  • Using an electric or stand mixer, cream together melted butter and both sugars. Add the egg and egg yolk (or flax “eggs”), milk and vanilla and mix well. Slowly incorporate the flour mixture until thoroughly combined. Add the chocolate chips and stir to combine.
  • Chill the dough in the refrigerator until firm, about an 1 hour. Scoop big spoonfuls of dough and shape them into cookies on a baking sheet.
  • Preheat oven to 375 degrees.
  • Bake for 11-13 minutes, until edges of cookies are starting to brown. The cookies will not look set, but will continue to cook on the pan. Remove from the oven and cool the cookies on the pans for 2 minutes. Move the cookies to a wire rack and cool completely before eating or storing in an airtight container.

Tasty Tuesday – Mocha Punch

I first tried this smooth, creamy punch at a friend’s graduation party. It was so delicious I think everyone at the party asked for the recipe. Having a frosty glass of this mocha punch is almost like sipping a chocolate shake. It would be perfect for a family gathering or Christmas party. It’s sure to be the first thing gone, so plan to have everything ready to make more!

Mocha Punch
Servings: 20-25, Prep: 15 min. + chilling
Ingredients
6 cups chilled coffee
1/2 cup instant chocolate drink mix
1/2 cup sugar
1/2 gallon fair trade vanilla ice cream
1/2 gallon fair trade chocolate ice cream
1 cup heavy whipping cream, whipped
Fair Trade Chocolate curls, optional

Directions

  • Brew 6 cups of fair trade coffee. In a large saucepan or mixing bowl: Add coffee, drink mix, and sugar; stir until dissolved. Cover and refrigerate for 4 hours or overnight.
  • About 30 minutes before serving, pour mixture into a large punch bowl. Add Fair Trade ice cream (Ben & Jerry’s) by scoopfuls; stir until partially melted.
  • Garnish with dollops of whipped cream and Fair Trade chocolate curls if desired.

Erica at Comfy Belly was gracious enough to allow us to share one of her favorite fair trade recipes with our Seven Hopes United readers! Her blog is great, and her recipes are amazing.     Without further ado, here is Erica and her recipe for Chocolate Biscotti made with Fair Trade cocoa:

    “Chocolate biscotti reminds me of chocolate cookies I had as a kid, like Oreos and chocolate sugar cookies. I use a good amount of fair trade cocoa in this recipe, but you can probably go with a bit less and still get delicious results. Although you don’t need to add much to these, some nuts or chocolate chips make a great compliment to the crunchy, chocolaty goodness. Dunking in a cup of tea or coffee works too!”

    Ingredients

  • 2 large eggs
  • 1 cup of honey (or other sweetener)
  • 8 tablespoons of butter, softened (1/2 cup)
  • 1 teaspoon of vanilla
  • 3 1/2 cups of almond flour
  • 1 cup of fair trade cocoa
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of sea salt
  • 2 teaspoons of cinnamon
  • chocolate or white chocolate chips (and/or nuts) are optional
  • 1 teaspoon of an unrefined sugar, such as muscovado (optional)
  • 1/2 teaspoon of almond extract (optional)
  • Preparation

    1. Preheat an oven to 325 degrees F.
    2. In a bowl, add the butter, honey, eggs, and vanilla, and beat until well blended.
    3. In a separate bowl, add all the dry ingredients and mix until well blended.
    4. Add the dry mixture to the wet mixture and mix again until well blended.
    5. Mold the mixture into two balls of dough. Place each ball of dough on oiled, buttered, or stick-free cookie sheet. Shape each ball of dough into a low, flat log. It will expand and rise somewhat, so account for a small amount of growth. Pack down the dough to remove air pockets. Alternatively, you can pack the dough in a tart pan with the dimensions you want your biscotti to have when finished.
    6. Bake the logs for about 20 minutes, or until lightly browned and cake-like. Take the logs out of the oven and reduce the temperature to 275 degrees F.
    7. Cool the logs for about 10 minutes and then slice each log into thin strips about 1/2 inch in thickness. Place the slices on their side on the cookie sheet, and then bake for about 15 minutes, or until they are fully crisped.
    8. Enjoy!
