Tasty Tuesday: Fair Trade Lemonade & Fair Trade S’mores

Summertime is in full swing! 4th of July is right around the corner and I am gearing up for picnics and free outdoor summer concerts! I love this time of year. I dedicate this Tasty Tuesday to the spirit of summer!

Fair Trade S’mores! In my mind, summer is about camp fires and nothing goes better with camp fires than s’mores! This is a simple recipe, of course, but I jazzed it up a bit with dark fair trade chocolate for these fair trade s’mores.  All you need are graham crackers, marshmallows and a fair trade chocolate bar and voila, you have a simply classic American snack.  Incidentally, you don’t need a camp fire for s’mores, there are certainly other ways to warm the marshmallow and thus melt the chocolate.

Fair Trade Lemonade! Another easy recipe and classic summer companion.  The lemons I used are organic Eureka lemons.  I had never seen such large lemons before.  These lemons produced a good amount of juice too.

Perfect Lemonade

  • Prep time: 10 minutes

INGREDIENTS

  • 1 cup sugar (can reduce to 3/4 cup) – (I used Wholesome Sweetners Fair Trade Sugar)
  • 1 cup water (for the simple syrup)
  • 1 cup lemon juice
  • 3 to 4 cups cold water (to dilute)

METHOD

1 Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely.

2 While the sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough for one cup of juice.

3 Add the juice and the sugar water to a pitcher. Add 3 to 4 cups of cold water, more or less to the desired strength. Refrigerate 30 to 40 minutes. If the lemonade is a little sweet for your taste, add a little more straight lemon juice to it.

Serve with ice, sliced lemons.

Yield: Serves 6.

4th of July-Inspired Fair Trade!

To me, July 4 equals saying Happy Birthday to our great country while wearing red, white and blue, watching fireworks over the water, and eating a charred hot dog (or two!) with family and friends. It’s also an opportunity to remember and be grateful for our freedom in practically everything we do. That includes shopping. :) In light of that freedom we’re grateful for, we can be inspired to give liberty to others in their daily lives by purchasing fair trade!

Wedding Wednesday: Fair Trade Beach Wedding Ideas

fair trade beach weddingOver the years I’ve been to several weddings and of all of them only one was on the beach.  It was a sunrise wedding off the coast of Savannah, Georgia and while it was obviously quite early in the morning, it was beautiful.  I love the idea of a beach wedding.  It can be lovely and sophisticated and yet have a touch of breezy carefreeness; that sounds like a wonderful combination to me!

Tasty Tuesday: Fair Trade Chocolate Chunk Cookies w/ a Twist!

Salt Sweet Goodness indeed and with fair trade chocolate!

When I have the chance to go to the movies, which isn’t so often these days, I always get the same thing, buttered popcorn along with chocolate.  I love the combination of salty and sweet.  So when I heard about today’s recipe I was on board!

Joy the Baker modified an already delicious sounding cookie that can be found in the Smitten Kitchen Cookbook: buttered popcorn cookies.  The addition of coarsely chopped dark fair trade chocolate makes for salty sweet goodness that is unbelievable.

Here’s the recipe and enjoy.

Deb’s Buttered Popcorn Chocolate Chip Cookies

makes 24 cookies

adapted slightly from The Smitten Kitchen Cookbook

2 tablespoon vegetable oil

1/4 cup yellow corn kernels

1/4 teaspoon salt

1 tablespoon unsalted butter, melted

1/2 cup unsalted butter, softened to room temperature

1/2 cup light brown sugar, packed

1/3 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

1 1/4 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup coarsely chopped dark chocolate

(one large bar of fair trade chocolate fit the bill)

coarse sea salt for sprinkling

Let’s make the popcorn first.  Place oil in the bottom of a medium saucepan.  Heat over medium heat.  When oil is hot, add corn kernels in a single layer across the bottom of the pan.  Cover the pot but keep the lid ajar to let a bit of steam out.  Listen to the popcorn as it pops.  Turn off the heat and remove the pan from the burner once the popping has subsided.  Sprinkle with salt and drizzle with butter.  Toss to coat all of the popcorn in a bit of butter.  Piece through the popcorn to remove any unpopped kernels.  Set aside to cool.  You’ll have about 4 cups of popcorn.

Next we’ll make the dough.  Place a rack in the center and upper third of the oven and preheat oven to 350 degrees F.  Line two baking sheets with parchment paper.  Set aside.

In the bowl of a stand mixer fitted with a paddle attachment, cream together butter, brown sugar, and granulated sugar.  Cream until butter is pale and fluffy, about 3 minutes.  Beat in egg and vanilla extract for one more minute.  Add the flour, baking soda, and salt and beat on low until just combined.  Remove the bowl from the stand mixer and use a spatula to fold in the popcorn.  It might seem like a disproportionate amount of popcorn considering the cookie batter.  Keep folding.  The popcorn will break down a bit as it’s folded in.  Fold in dark chocolate.

Scoop dough by the heaping tablespoonful onto the prepared baking sheet.  Sprinkle the tops of the cookies with coarse sea salt.  Bake for 10 to 13 minutes or until the edges and tops are golden brown.  Remove from the oven, allow to rest on the baking sheet for 5 minutes then transfer to a cooling rack to cool completely.

Store cookies in an airtight container at room temperature.

World Refugee Day

June 20th was World Refugee Day.  I apologize for posting this after the day but I still wanted to be sure to share some thoughts about World Refugee Day.

For the past several years I have had the opportunity and pleasure to work with refugees and asylum seekers from around the globe.  However, the vast majority came from the Middle East and East Africa.  As a mental health clinician, I have been invited into their journey and have heard their extraordinary stories.  My clients have faced tremendous trauma and unbelievable heartache and loss. And even through such adversity so many of them have been able to survive and thrive and start a new life here; finding joy and happiness in their new community and new friends.  It is not an easy journey, from being forced to flee their homeland to starting over in the United States.  Still countless people face such a journey each year and are able to start new and fulfilling lives in their new home country.

Newly arriving in the United States, refugees excitedly anticipate a new life.

What does all of this have to do with fair trade? Perhaps you are asking yourself this question.  I will not pretend to assume that fair trade will or can solve all the problems facing the world.  But fair trade does create a more stable environment for those participating in its system; fair trade provides jobs and health care and stable societies, which tend to have lower rates of conflict as well.

Wouldn’t it be an amazing turn of events if no one was forced to flee their home due to starvation, lack of work, persecution, war and beyond?  It wouldn’t it be great if families could stay together unless they decided to part from one another? Wouldn’t it be amazing if we all could stand up for what we believe in without the threat of persecution?  Perhaps someday this will be reality? And perhaps we could make it so through the purchases we choose to make!
